Mini Apple Pies

These mini apple pies couldn't be easier to make!  All you need are a few apples, some sugar and spices, puff pastry and about 30 minutes to create these.

Peel, core and slice apples. Dip each apple slice in a cinnamon and sugar mixture. Set apple slices aside to use in the next step. 

Place each apple slice on a 5" x 5 piece of puff pastry with slits in each corner. Brush with a beaten egg. Fold opposite ends of the puff pastry over the apple slice.

Fold remaining opposite ends over the apple slices. Brush with beaten egg and sprinkle with cinnamon and sugar.

Bake at 400° F for 12 - 15 minutes.  The puff pastry will be well risen and a golden brown color.  Apples will be slightly softened.

Serving suggestion: add a scoop of vanilla ice cream to the slightly warm pastry! Visit the link below for recipe and instructional video!
