Blueberry Crumble Pie

The ultimate blueberry crumble pie!  Loaded with wild Maine blueberries and topped off with a crunchy oatmeal crumble.

What do we love about this recipe?  It creates a pie without a soggy crust and it slices beautifully! Additionally, it uses frozen blueberries so it can be made year-round.

Crumble Topping

Gather your ingredients to make the crunchy oatmeal topping: brown sugar, flour, butter, cinnamon and oatmeal.

Pie Filling

Gather your ingredients to make the pie filling: blueberries, sugar, water, juice, cinnamon, salt and corn starch.

Defrost blueberries overnight in your fridge.  Pour into a sieve and drain well.   Reserve the drained juices for the next step.

Make a slurry with sugar, blueberry juice and cornstarch.  The slurry is the thickener which will hold the pie together.

Cool the slurry briefly and add to the bowl of blueberries.  Stir gently to avoid smashing your blueberries.

Heat up that oven!

Combine brown sugar, oatmeal, flour and butter in a bowl.  Using your hands, work the ingredients together until it resembles coarse pieces.
