Rugelach with Date Filling

These rugelach cookies are easier to make than they look. The tangy dough comes from adding cream cheese and sour cream to the dough recipe.

The date filling for this rugelach cookie recipe is sweet enough on its own without adding any processed sugar. Simply puree the dates in a food processor.

The rugelach dough is best made using a stand mixer, but a hand mixer may also be used.  After making the dough allow it to relax in the fridge before rolling out.

Tip: thinly spread the date filling close to the edges of each disc of dough.  This prevents the filling from seeping out during baking.

Filling

Each disc makes 12 cookies (a total of 48 cookies per recipe!).  Carefully roll each cookie and place on a sheet pan with the point side down.
