Oatmeal Bars with Date Filling

Dates are increasing in popularity as a dessert ingredient.  These little wonders have a chewy texture and are naturally sweet.

Why use dates in desserts?

The first step in making the cookies is to create the date filling.  Dates, sugar, water and flour are heated together for the gooey date filling.

Next, cream together the butter and sugar until light and fluffy.  Add the flour, baking soda and salt then stir in the oatmeal. 

Assemble the bars by placing half of the oatmeal mixture in a pan. Add the date filling and cover with the remaining cookie dough. Bake and cool before cutting.

Enjoy!
