These Easy Almond Flour Cookies are soft, chewy, and slightly nutty, with a delicate texture that melts in your mouth. The cookies are made with finely ground almonds and are naturally gluten free.

Ingredients
 
 

Almond flour cookie dough

  • 2 Cups Almond flour finely ground
  • ½ teaspoon Salt
  • ½ teaspoon Baking powder
  • ¼ Cup Unsalted butter melted and slightly cooled
  • 3 Tablespoons Honey
  • 1 teaspoon Vanilla extract

Chocolate and almond topping (optional)

  • ½ Cup Bittersweet chocolate chips melted
  • 2 Tablespoons Almonds chopped

Instructions
 

Almond cookie dough

  • Combine almond flour, baking powder and salt in a large mixing bowl. Stir well to distribute ingredients evenly.
    2 Cups Almond flour, ½ teaspoon Baking powder, ½ teaspoon Salt
  • Add melted butter, honey and vanilla extract to the mixing bowl. Stir until no dry pieces of almond flour remain. If the dough still looks a bit crumbly, squeeze dough together using your hands.
    ¼ Cup Unsalted butter, 3 Tablespoons Honey, 1 teaspoon Vanilla extract
  • Place mixing bowl in refrigerator for 30 minutes.
  • Preheat oven to 350℉ (177℃)
  • Line two baking sheet pans with parchment paper or silicone baking mats.
  • Scoop approximately 1 ½ tablespoons of dough for each cookie. Using your palms, roll dough into a ball and lightly flatten.
  • Place cookies on a baking sheet leaving approximately 2" of space between each cookie.
  • Bake for 10 - 12 minutes. Edges should be light brown when finished baking.
  • Allow cookies to cool on baking sheets for 10 minutes. Transfer to a wire rack to finish cooling.

Chocolate and almond topping (optional)

  • Prepare a sheet pan by lining with parchment paper or a silicone mat.
  • Place chocolate chips in a microwave safe bowl. Heat for 30 seconds at 50% power. Stir chips. Continue to heat in 30 second bursts at 50% power until melted, stirring between each heating.
    ½ Cup Bittersweet chocolate chips
  • Dip half of each cookie in chocolate, drip off excess and place on prepared sheet pan.
  • Sprinkle generously with crushed almonds.
    2 Tablespoons Almonds
  • Set aside until chocolate has set.
