Preheat oven to 350℉ (180℃)
Combine oatmeal, walnuts and cornstarch in a bowl. Set aside.
¾ Cup Old-fashioned Oatmeal, ¾ Cup Walnuts, 2 Tablespoons Cornstarch
In a separate bowl, whisk together eggs until fully combined.
3 Large Eggs
Add sugar to bowl with eggs. Whisk until combined.
¾ Cup Granulated sugar
Add corn syrup and melted butter to bowl with eggs and sugar. Whisk until combined.
¾ Cup Dark Corn Syrup, 4 tablespoon Unsalted butter
Add combined oatmeal, walnuts and cornstarch to bowl. Stir until evenly distributed.
Pour filling into pie shell. If adding chocolate chips, sprinkle over top of pie.
1 9" Unbaked pie shell, ½ Cup Chocolate, chopped into small pieces
Bake for 45 minutes or until center is set (internal temperature of pie should be at least 180℉). Note: check pie after 30 minutes - if crust is turning to dark place a pie shield over the crust.
Place on a cooling rack and allow to cool completely (approximately 1 hour).
