This Chocolate Pear Galette combines the rich, indulgent flavor of chocolate with the natural sweetness and juiciness of pears. Add some crunchy almond slices for texture, and you have the perfect dessert to serve to guests.
Generously sprinkle flour on worksurface. Roll out puff pastry to a 12" square. Trim off corners to make a slightly rounded shape. Place pastry on a baking sheet pan lined with parchment paper or a silicone baking mat.
Spread chocolate/almond filling to within 1 ½" to edge of pastry.
Arrange sliced pears over chocolate filling.
Lightly whip an egg. Brush exposed pastry with egg.
Begin folding pastry over filling. Apply egg to pastry as needed to ensure it adheres to itself.
Brush whipped egg on outside of pastry. Sprinkle generously with raw sugar.
Return assembled galette to refrigerator.
