Chocolate Pear Galette with Almonds

This Chocolate Pear Galette combines the rich, indulgent flavor of chocolate with the natural sweetness and juiciness of pears. Add some crunchy almond slices for texture, and you have the perfect dessert to serve to guests.

  • 1 Baking Sheet Pan
  • 1 Parchment paper or silicone baking mat
  • Measuring cups and spoons
  • 1 Knife & cutting board

Ingredients
 
 

Chocolate Filling

  • 6 Tablespoons Unsalted butter melted and cooled slightly
  • cup Granulated sugar
  • 1 cup Almond flour may substitute with all-purpose flour for nut-free version
  • 1 large Egg room temperature
  • 1 ½ Tablespoon Cocoa Powder
  • cup Sliced almonds eliminate if making a nut free version

Pear Galette

  • 1 Sheet Puff Pastry defrosted
  • 3 Medium Pears use firm pears
  • 1 Large Egg, lightly beaten For brushing pastry
  • 1 Tablespoon Raw Sugar For sprinkling on pastry prior to baking (may replace with granulated sugar)

Instructions
 

Chocolate filling

  • In a small bowl, whisk together melted butter and granulated sugar.
  • Add egg, cocoa powder and almond flour to the bowl. Stir together well. Add sliced almonds and stir.

Assemble galette

  • Wash pears. Slice thinly (approximately ¼" thick).
  • Generously sprinkle flour on worksurface. Roll out puff pastry to a 12" square. Trim off corners to make a slightly rounded shape. Place pastry on a baking sheet pan lined with parchment paper or a silicone baking mat.
  • Spread chocolate/almond filling to within 1 ½" to edge of pastry.
  • Arrange sliced pears over chocolate filling.
  • Lightly whip an egg. Brush exposed pastry with egg.
  • Begin folding pastry over filling. Apply egg to pastry as needed to ensure it adheres to itself.
  • Brush whipped egg on outside of pastry. Sprinkle generously with raw sugar.
  • Return assembled galette to refrigerator.

Bake galette

  • Preheat oven to 400℉
  • Bake for 25 - 28 minutes. Pastry should be a dark golden color.
  • Cool galette on pan for 20 minutes. Transfer to cooling rack to cool completely.

Notes

  • Place the galette in an airtight container and store at room temperature for up to 2 days. The finished dessert does not freeze well.
  • Keeping the pastry cold will improve your puff pastry desserts. This recipe recommends chilling the assembled galette in the fridge before baking
