Ingredients

Gather the following ingredients to make this chocolate pear galette with almonds:

ingredients needed to make pear galette including puff pastry, granulated sugar, butter, raw sugar, pears, eggs, cocoa powder, almond flour and sliced almonds
  • Puff pastry - you need one sheet of puff pastry. If using frozen puff pastry, defrost according to manufacturer's instructions. To make your own puff pastry check out my recipe here.
  • Pears - use firm pears. A soft pear will result in a mushy filling. I recommend Bosc or Anjou pears.
  • Unsalted butter
  • Granulated sugar
  • Almond flour - replace with all-purpose flour if you prefer a nut-free version
  • Eggs - this recipe uses two eggs: one for the chocolate filling and one to brush on the outside of the galette before baking.
  • Cocoa powder
  • Raw sugar - optional for sprinkling over galette prior to baking
  • Almond slices - optional

See recipe card for quantities.

Instructions

Keeping the pastry cold is key to successful puff pastry desserts. This recipe suggests chilling the assembled galette in the fridge before baking for best results.
