Football Whoopie Pies with Cake Mix

  • 3 Sheet pans lined with parchment paper or silicone baking mats

  • Bowls, measuring cups and spoons
  • Rubber spatula
  • 2 Pastry bags

Ingredients
 
 

Whoopie pies

  • 1 Box Chocolate cake mix (13.25 ounce box)
  • 1 Box Instant chocolate pudding (3.9 ounce box)
  • 3 Large Eggs
  • ¾ Cup Water
  • ½ Cup Vegetable oil

Marshmallow filling

  • ½ Cup Unsalted butter softened
  • Cup Powdered sugar sifted
  • 2 Cups Marshmallow fluff
  • 1 teaspoon Vanilla extract

Instructions
 

Prepare pans

  • creating a template with football shapes, each about 2 ¼ inches long (or use my free downloadable template found in the notes section below). Make sure to leave at least 1½ inches of space between each shape so they have room to spread while baking.
  • Line each baking pan with parchment paper or a silicone baking mat, placing it over the template to guide your football shapes.

Whoopie pies

  • Preheat oven to 350℉ / 177℃
  • Place cake mix, instant pudding, eggs, vegetable oil and water in a large bowl. Stir until well combined (note: you may use a hand or stand mixer for this step)
  • Transfer whoopie pie batter to a pastry bag fitted with a ¼" opening or cut a small hole in the bag.
  • Pipe an outline along the edges of the football template, then fill in the inside to create a solid shape.
  • Bake the whoopie pies for 10–12 minutes, or until they are well risen and firm to the touch.
  • Cool completely before filling.

Marshmallow filling

  • Place softened butter and marshmallow fluff in a bowl. Using a hand or stand mixer, being mixing together on medium speed. Continue to mix until well combined.
  • Add powdered sugar and vanilla extract to bowl. Mix on low speed and gradually increase speed to medium. Continue to mix until well combined.

Assemble and decorate whoopie pies

  • Spread a heaping tablespoon of filling onto the flat side of half of the whoopie pies. Then, take the remaining whoopie pie halves and gently press them on top of the filling to create a sandwich.
  • To create the football laces, pipe a straight line of marshmallow filling down the center of each whoopie pie. Next, pipe 4 to 5 short lines across the long line to complete the look. Note: Royal icing can also be used to create the design.

Notes

To store, place the pies in an airtight container, and if you're stacking them, make sure to put sheets of parchment paper between each layer. They can be stored in the fridge for up to five days, but keep in mind that they don't freeze well.
