Preheat oven to 350℉ (180℃)
Prepare two sheet pans by lining with parchment paper or silicone baking mats.
In a medium bowl combine flour, cinnamon, baking soda, and salt. Set aside for later.
1 ½ Cup All-purpose flour, 1 teaspoon Ground cinnamon, ½ teaspoon Baking soda, ½ teaspoon Salt
Place brown sugar, vegan butter and egg replacement in a mixing bowl (if not using an egg replacement add ¼ cup applesauce). Mix until combined and fluffy.
1 Cup Brown sugar, ½ Cup Vegan butter, 3 Tablespoons Vegan egg replacement (Simply Eggless)
Add dry ingredients (flour, spices, baking soda) to the mixing bowl. Mix on low speed until combined.
Stir in apple chunks and walnuts by hand using a spatula.
1 Cup Apples, finely chopped
Scoop approximately 1½ tablespoons of cookie dough and place on prepared cookie pans. Leave at least 2" of space between each cookie.
Bake for 12 minutes or until lightly browned.
Remove from oven and allow to cool for 5 minutes. Transfer cookies to a cooling rack and allow to cool completely.
