Preheat oven to 350℉ (180℃)
Prepare two cookie sheets by lining with parchment paper or silicone mats.
In a large bowl, combine flour, oats, baking powder, baking soda, salt, cinnamon, nutmeg and ginger. Set aside for later.
1 ½ cups Old Fashioned Oatmeal, 1 cup all-purpose flour, ¾ teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon ground cinnamon, ¼ teaspoon ground ginger, ¼ teaspoon ground nutmeg, ½ teaspoon salt
In a medium bowl, whisk together applesauce, brown sugar, granulated sugar and vegetable oil.
½ cup light brown sugar, packed, ¼ cup granulated sugar, ¼ cup applesauce, unsweetened, ⅓ cup vegetable or canola oil
Add wet ingredients to the bowl with the dry ingredients. Stir until well moistened.
Add shredded carrots to bowl. Stir until evenly distributed (note: add any additional ingredients, such as nuts, raisins, etc... at this step).
1 cup carrots, ¾ cup dried fruit or nuts
Scoop approximately 1½ tablespoons of cookie dough onto a baking sheet lined with parchment paper or a silicone baking mat.
Lightly flatten each cookie using a fork dipped in flour.
Bake for 9 - 10 minutes. Let cookies cool for 5 minutes. Then move to a wire rack to cool completely.
