Ingredients

ingredients needed for mini apple pies in puff pastry
  • Tart apple: only one apple is needed to produce six mini hand pies. A Granny Smith apple works well in this recipe. Peel, core and cut the apple into six round slices (approximately ¼" slices).
  • Puff Pastry: homemade puff pastry or a store-bought brand work equally well. You need six 5" x 5" squares of puff pastry.
  • Cinnamon and sugar: combine the cinnamon and sugar in a shallow dish. Dip both sides of the apple slices to coat with the mixture.
  • Raw sugar: sprinkled over the pastry prior to baking
  • Egg: lightly whip one egg for brushing on the pastry before baking.

I didn't realize folding the puff pastry to make this shape could be so easy. My apple hand pies looked like they came straight from a Paris pastry shop!
