These Homemade Protein Granola Bars are the perfect grab-and-go snack for busy mornings, afternoon pick-me-ups, or post workout fuel. Packed with wholesome ingredients, plenty of protein, and just the right amount of sweetness, they're easy to make and and even easier to love.

These granola bars with protein powder are loaded with the flavors of oats, honey, banana, and chocolate in every bite. This is a satisfying snack you can feel good about and it's soft, chewy and easy to make.

Ingredients

Gather the following ingredients to make these homemade protein granola bars:

  • Oatmeal - use old-fashioned oats. Quick cooking oats may cause the bars to be mushy.
  • Eggs - you need two whole eggs and one egg yolk for this recipe (the egg yolk adds moisture to the bars). Use large eggs and bring to room temperature before starting recipe
  • Peanut butter - use natural peanut butter with no added sugar, and stir well to fully incorporate the oils before using..
  • Honey
  • Protein powder - use a vanilla or unflavored whey protein powder
  • Banana - this recipe calls for one ripe banana, mashed until smooth.
  • Chocolate chips - you can replace the chocolate chips with mix-ins like roasted nuts, raisins, chopped dates, or your favorite add-ins.

Instructions

Follow the simple instructions below and you'll be enjoying these granola bars in no time!

Prepare baking pan


Prepare your baking pan to make removal easier by following instructions below:

  • Use a 8" square pan with sides at least 2" high.
  • Cut two 8" x 12" strips of parchment paper.
  • Place two strips crossing each other so the paper extends beyond top of pan.

Preparing your pan this way makes it easier to lift the dessert out when it's done.

Granola bars instructions

1 - Preheat oven to 350℉ (180℃).

2 - Place peanut butter, honey, eggs, egg yolk, protein powder, and mashed banana in a large mixing bowl. Using a silicone spatula, stir until well combined.

3 - Add the oatmeal to the mixing bowl and stir well until the oats are evenly coated.

4 - Add chocolate chips to the mixing bowl and stir until evenly distributed.

5 - Pour dough into the prepared baking pan and smooth evenly with a spatula.

6 - Bake for 18-20 minutes, or until the top is lightly golden brown and the bars are set in the center. Place pan on a wire rack and allow bars to cool completely.


7 - To remove the granola bars from the pan, gently lift up on parchment paper hanging over the sides and transfer bars to a cutting board. Slice, serve and enjoy!

Storage

Store bars in an airtight container at room temperature for up to 4 days to keep them fresh. If you want to save them longer, wrap tightly in plastic wrap and freeze for up to 2 months

Equipment

  • 1 8" by 8" square pan with sides at least 2" high
  • Parchment paper
  • 1 Mixing bowl
  • 1 Silicone spatula
  • Measuring Cups

Ingredients
 
 

  • 2 Cups Oatmeal use old-fashioned oats
  • ½ Cup Protein powder
  • ⅔ Cup Peanut butter use natural peanut butter with no sugar added; stir well to incorporate the oils
  • ⅓ Cup Honey may substitute with pure maple syrup
  • 2 Large Eggs
  • 1 Large Egg yolk
  • 1 Medium Ripe banana mashed
  • ⅓ Cup Chocolate chips

Instructions

      ⅓ Cup Chocolate chips
    • Pour the dough into the prepared baking pan and smooth evenly with a spatula.
    • Bake for 18-20 minutes, or until the top is lightly golden brown and the bars are set in the center.
    • Place pan on a wire rack and allow bars to cool completely.
    • To remove the granola bars from the pan, gently lift up on the parchment paper hanging over the sides and transfer the bars to a cutting board before slicing.
