No Bake Almond Butter Pie

Want something sweet and nutty but don't want to turn on the oven? Then this No Bake Almond Butter Almond Butter Pie is the ideal dessert for you! Almond butter gives this pie a smooth and creamy texture, similar to a peanut butter pie but with a distinct almond flavor.

The richness and nuttiness of this pie will satisfy your sweet cravings with just a small slice. Additionally, almonds are a good source of healthy fats, protein, and fiber. While this pie is not low-calorie, it does offer some nutritional benefits compared to other desserts.

Ingredients

ingredients need to make a No Bake Almond cream pie
  • Purchased 9" pie crust: no-bake pie crusts are most often found in your grocer's baking aisle. A chocolate or graham cracker crust works well with the almond cream filling.
  • Sweetened condensed milk: you need one 14-ounce can for this recipe. Most often found in your grocer's baking aisle.
  • Cream cheese: use a full-fat cream cheese and bring to room temperature before starting the recipe
  • Heavy cream: used in both the almond cream filling and the pie topping
  • Almond butter: I recommend using an all-natural almond butter to give the pie the best taste. Be sure to blend the separated oils back into the butter before staring the recipe.
  • Powdered sugar: used in both the almond cream filling and the pie topping

Instructions

Place cream cheese, almond butter and powdered sugar in the bowl of a stand mixer fitted with the paddle attachment (a hand mixer may also be used). Mix together until well combined, scraping the bowl as needed.

Add sweetened condensed milk to the bowl and mix until combined, scraping the bowl as needed.

Using a clean bowl, whip the heavy cream until medium peaks form.

Gently fold whipped cream into the almond butter mixture.

Pour the almond butter cream into the pie shell. Place in refrigerator until set (1 - 2 hours).

Topping: Place the heavy cream and powdered sugar in a mixing bowl. Mix until medium peaks form. Transfer whipped cream to a piping bag and pipe swirls on top of pie.

Equipment

I suggest the following equipment to create this recipe:

  • Hand or stand mixer
  • Rubber spatula
  • Measuring cups
  • Mixing bowls

Storage

Place the No-Bake Almond Butter Pie in an airtight container and store in the refrigerator for up to 4 days.

Alternatively, freeze the pie for up to 2 months. To defrost, remove from the freezer and place in the refrigerator for 2 hours.

Top tip

If using a natural almond butter be sure to stir well to incorporate the separated oil. One way to do this is to empty the almond butter into a mixing bowl and, using an immersion blender, mix until well combined. Refrigerate the almond butter after blending.

Pie Crust

  • 1 9" Purchased pie crust (chocolate or graham cracker)

Almond Cream Filling

  • 1 Cup Full-Fat Cream Cheese, room temperature
  • 1 Cup Almond Butter (crunchy or smooth)
  • 1 Cup Powdered Sugar
  • 1 Can Sweetened Condensed Milk (14 ounces)
  • 1 Cup Heavy Whipping Cream

Whipped Cream Topping (optional)

  • 1 Cup Heavy Whipping Cream
  • ¼ Cup Powdered Sugar

Instructions
 

Almond Cream Filling

  • Place cream cheese, almond butter and powdered sugar in the bowl of a stand mixer fitted with the paddle attachment (a hand mixer may also be used). Mix together until well combined, scraping the bowl as needed.
  • Add sweetened condensed milk to the bowl and mix until combined, scraping the bowl as needed.
  • Using a clean bowl, whip the heavy cream until medium peaks form. Gently fold into the almond butter mixture.

Pie Assembly

  • Pour the almond butter cream into the pie shell.
  • Place in refrigerator until set (1 - 2 hours).

Whipped Cream Topping (optional)
