Almond Flour Cookies Instructions
Follow these easy steps, and you'll have a batch of delicious almond flour cookies ready in no time:
1 - Combine almond flour, baking powder and salt in a large mixing bowl. Stir well to distribute ingredients evenly.
2 - Add melted butter, honey and vanilla extract to the mixing bowl. Stir until no dry pieces of almond flour remain.
3 - If the dough looks crumbly, press it together with your hands until it holds its shape. Then, place the mixing bowl in the refrigerator for 30 minutes so the flavors can mix and the dough can firm up.
4 - Scoop approximately 1 ½ tablespoons of dough for each cookie. Using your palms, roll dough into a ball and lightly flatten. Place cookies on a baking sheet lined with parchment paper or a silicone mat, leaving approximately 2" of space between each cookie.
5 - Bake at 350℉ (177℃) for 10 - 12 minutes. Edges should be light brown when finished baking. Allow cookies to cool on baking sheets for 10 minutes. Transfer to a wire rack to finish cooling.
Optional topping instructions
This step is optional, but it gives your cookies extra flavor and texture.
1 - Place chocolate chips in a microwave safe bowl. Heat for 30 seconds at 50% power. Stir chips. Continue to heat in 30 second bursts at 50% power until melted, stirring between each heating.
2 - Dip half of each cookie in chocolate, drip off excess and place on prepared sheet pan. Sprinkle generously with crushed almonds.
Variations
These simple almond flour cookies are delightful on their own, but you can easily customize them to suit your taste. Try one of these delicious add-ins:
- Chocolate - fold in a handful of mini chocolate chips—bittersweet or white chocolate—as the final step in making the dough
- Nuts - for even more almond taste add a few almond slivers to the top of each cookie before baking
- Dried apricots - any dried fruit works well with these cookies - especially dried apricots. Chop up ½ cup of dried apricots and fold into the dough
- Citrus - leave out the vanilla extract and use lemon or lime juice instead. Also, mix in 1 teaspoon of lemon or lime zest into the cookie dough.
