Gather the following ingredients to make these eggless apple cookies:
- All-purpose flour - sift the flour to remove any lumps for a smoother texture. A gluten-free 1-to-1 baking flour can be used as a substitute.
- Baking soda and ground cinnamon
- Butter - use unsalted, softened butter
- Granulated sugar and brown sugar - you may use light or dark brown sugar
- Apple - use a baking apple such as Granny Smith, Fuji or Gala. Peel and finely grate the apple.
- Applesauce - use unsweetened applesauce

Instructions
Follow these simple steps, and you'll have delicious eggless apple cookies ready to enjoy in no time:
1 - Place flour, baking soda, cinnamon and salt in a bowl. Whisk together until well combined. Set aside.
2 - Peel an apple and grate finely. Place apple pieces on a paper towel to absorb excess moisture. Set aside.
3 - Using a hand-held or stand- mixer fitted with the paddle attachment, mix butter and sugar together until smooth.
4 - Add applesauce and grated apple. Mix until smooth.
5 - Add dry ingredients and mix on low speed until just combined.
6 - Optional: stir in any additional ingredients such as nuts, raisins, etc... Place dough in refrigerator for one hour to allow flavors to meld.
7 - Scoop approximately 1 ½ tablespoons of cookie dough and place on prepared baking sheets. Leave approximately 2" of space between each cookie to allow for spreading.
8 - Bake in preheated oven for 10 - 12 minutes at 350℉ (177℃). The cookies will be a light golden color on top. Remove pans from oven and let cool for 10 minutes then move to cool completely on wire racks.
