Which strawberries to use

Use the freshest, reddest strawberries you can find. I don't recommend using frozen strawberries as they will be too soft when defrosted. Most of us have access to good strawberries year round in our markets, but if you can get them fresh from a local farmer your pie just moved up a few notches!

Ingredients

Gather the following ingredients before starting this Strawberry Cream Cheese Pie recipe:

  • Prebaked pie crust - use a purchased graham cracker crust for a no bake pie. Please check out my Sweet Pie dough as it works wonderfully with this pie.
  • Fresh strawberries - rinse and dry strawberries before beginning this recipe.
  • Cream cheese - use full-fat cream cheese brought to room temperature
  • Water
  • Corn starch
  • Granulated sugar

Storage

Place the Strawberry Cream Cheese Pie in an airtight container or wrap well in plastic. Store in your refrigerator for up to 4 days. This pie does not freeze well.
