Mention fresh strawberries and cream cheese, and most people will follow you anywhere! This strawberry pie, packed with both whole and diced strawberries, is an ideal treat for summer gatherings. Simple to make and the strawberry flavor truly shine with only a few ingredients.

Which strawberries to use
Use the freshest, reddest strawberries you can find. I don't recommend using frozen strawberries as they will be too soft when defrosted. Most of us have access to good strawberries year round in our markets, but if you can get them fresh from a local farmer your pie just moved up a few notches!
Ingredients
Gather the following ingredients before starting this Strawberry Cream Cheese Pie recipe:
- Prebaked pie crust - use a purchased graham cracker crust for a no bake pie. Please check out my Sweet Pie dough as it works wonderfully with this pie.
- Fresh strawberries - rinse and dry strawberries before beginning this recipe.
- Cream cheese - use full-fat cream cheese brought to room temperature
- Water
- Corn starch
- Granulated sugar
Storage
Place the Strawberry Cream Cheese Pie in an airtight container or wrap well in plastic. Store in your refrigerator for up to 4 days. This pie does not freeze well.

Strawberry Cream Cheese Pie Recipe

Ingredients
- 1 Pre-Baked Pie Crust Use store-bought graham cracker crust for a no-bake pie
- 1 Quart Fresh Strawberries
- 1 Cup Cream Cheese Softened
- 1 Cup Water Measure #1
- ¾ Cup Granulated Sugar Measure #1
- ¼ Cup Granulated Sugar Measure #2
- ⅓ Cup Cornstarch
- ⅓ Cup Cold Water Measure #2
Instructions
Prepare Strawberries
- Spread softened cream cheese evenly on bottom of the pre-baked pie crust.
- Rinse strawberries. Dry well by laying on paper towels.
- Slice tops off each strawberry so the surface is flat and it will stand on its own.
- Select the best looking strawberries. With the flat end down place the strawberries on top of cream cheese in the pie crust.
- Dice remaining berries into small slices. Place them in a medium-sized saucepan.
- Place cornstarch and cold water (measure #2) in a small bowl. Whisk until the cornstarch dissolves.
- Add 8 fluid ounces of water (1 cup) and 150 grams of granulated sugar (¾ cup) to the saucepan. Bring to a boil over medium heat.
- Add cornstarch/water mixture to saucepan. Mix constantly until the mixture thickens.
- Add 50 grams (¼ cup) granulated sugar to the saucepan. Continue to stir over medium heat until the sugar melts.
- Gently spoon the mixture over strawberries in the pie pan.
- Place pie in refrigerator for 30 minutes or until the pie is set.
- Serve with sweetened whipped cream or ice cream!
