These individual Chocolate Chip Skillet Cookies are simple to make and quite delicious. Served straight from the skillet this dessert makes for a rustic and charming presentation.

Why bake cookies in a cast iron skillet

Baking a cookie in a skillet creates a delightful texture—crispy on the edges and soft and gooey in the middle. The skillet allows for more even heat distribution, resulting in a perfectly cooked cookie.

Ingredients

This Chocolate Chip Skillet Cookie recipe uses the following ingredients:

  • All-purpose flour, baking powder, baking soda and salt
  • Unsalted butter: bring your butter to room temperature before making the cookie dough
  • Granulated and brown sugar
  • An egg: bring your egg to room temperature before making the cookie dough
  • Bittersweet chocolate chips

Serving

These Chocolate Chip Skillet Cookies are best served the day you make them. If you want to make in advance and still have a fresh baked dessert consider the following:

  • Make the cookie dough and press the dough into the skillets.
  • Place the skillets on a baking tray, wrap in plastic and place in the fridge.
  • When it's time for dessert, heat up the oven, remove skillets from the fridge, remove the plastic wrap, bake, cool for 20 minutes and serve.

Consider adding a scoop of ice cream or drizzle with caramel sauce to add more flavor and visual appeal.

Equipment

I use the following equipment when making this recipe:

  • Six 4" cast iron skillets
  • Hand or stand mixer
  • Measuring cups and spoons
  • Baking sheet pan

Storage

Wrap any leftover skillet cookies in plastic wrap and store at room temperature for up to 2 days.  If desired, reheat in a 300° F oven for 5 minutes to serve warm.

Chocolate Chip Skillet Cookies

  • 6 Mini Cast Iron Skillets

Ingredients
  

Cookie Dough

  • 2 cups All Purpose Flour (240 grams)
  • ½ teaspoon Salt
  • ¾ teaspoon Baking powder
  • ½ teaspoon Baking soda
  • 5 ounces Unsalted butter, room temperature (141 grams / 10 tablespoons)
  • ½ cup Granulated sugar (100 grams)
  • ¾ cup Light brown sugar (160 grams)
  • 1 Large Egg, room temperature
  • 1 ½ Cups Chocolate chips, bittersweet (255 grams)

Skillet preparation

  • 2 Tablespoons Unsalted butter, melted

Instructions
 

  • Preheat oven to 350°
  • In a medium bowl, whisk together flour, salt, baking soda, and baking powder. Set aside.
  • Using a stand mixer with the paddle attachment, begin creaming the butter, granulated sugar and brown sugar until light and fluffy (2 - 3 minutes on medium speed). Scrape the bowl as needed. (note: a hand mixer may also be used)
  • Add the egg to the mixing bowl. Mix on medium speed until combined, scraping the bowl as needed.
  • Add the flour mixture and mix on low speed until combined.
  • Stir in the chocolate chips by hand.

Assemble and bake skillet cookies

  • Lightly brush each cast iron skillet with melted butter
  • Divide cookie dough evenly between the 6 skillets (approximately a scant ¼ cup of dough).
  • Using your hands or a dough tamper, lightly press dough evenly in each skillet.
  • Place skillets on a baking sheet. Bake in preheated oven for 12 - 14 minutes, or until tops and edges of cookies are browning.
  • Cool skillet cookies for 20 minutes before serving.
  • Enjoy!

Notes
