- Granulated sugar

- Eggs - this recipe uses two eggs: one for the chocolate filling and one to brush on the outside of the galette before baking.
- Cocoa powder
- Raw sugar - optional for sprinkling over galette prior to baking

Instructions
Keeping the pastry cold is key to successful puff pastry desserts. This recipe suggests chilling the assembled galette in the fridge before baking for best results.
1 - Make chocolate filling: Whisk together melted butter and granulated sugar. Add egg, cocoa powder and almond flour. Stir together well. Stir in sliced almonds.
2 - Generously sprinkle flour on a worksurface. Roll out puff pastry to a 12" square. Trim off corners to make a slightly rounded shape. Place chocolate/almond filling in center of pastry.
3 - Spread chocolate/almond filling to within 1 ½" of pastry edge. Slice pears thinly. Arrange thinly sliced pears (approximately ¼" thick) over chocolate filling.
4 - Lightly whip an egg. Brush exposed edge of pastry with the egg. Begin folding pastry over filling. Apply egg as needed to ensure pastry adheres to itself.
5 - Brush egg on outside of galette. Sprinkle generously with raw sugar. Return assembled galette to refrigerator.
6 - Heat oven to 400℉. Bake for 24 - 28 minutes. Pastry should be a dark golden color.
Serving
Let galette cool on baking pan for 20 minutes then transfer to cooling rack to cool completely. Slice, serve and enjoy!
Consider adding a scoop of ice cream and drizzling with chocolate sauce before serving.

- 6 Tablespoons Unsalted butter melted and cooled slightly
- ⅓ cup Granulated sugar
- 1 cup Almond flour may substitute with all-purpose flour for nut-free version
- 1 large Egg room temperature

- ⅓ cup Sliced almonds eliminate if making a nut free version

- 1 Sheet Puff Pastry defrosted
- 3 Medium Pears use firm pears
- 1 Large Egg, lightly beaten For brushing pastry
- 1 Tablespoon Raw Sugar For sprinkling on pastry prior to baking (may replace with granulated sugar)
Instructions

- Spread chocolate/almond filling to within 1 ½" to edge of pastry.
- Arrange sliced pears over chocolate filling.
- Lightly whip an egg. Brush exposed pastry with egg.
- Begin folding pastry over filling. Apply egg to pastry as needed to ensure it adheres to itself.
- Brush whipped egg on outside of pastry. Sprinkle generously with raw sugar.
- Return assembled galette to refrigerator.
Bake galette
- Preheat oven to 400℉
- Bake for 25 - 28 minutes. Pastry should be a dark golden color.
- Cool galette on pan for 20 minutes. Transfer to cooling rack to cool completely.
